Ingredients:

1 1/2 cups all-purpose flour

1/2 cup brown sugar, packed

2 1/4 teaspoons baking powder

1 teaspoon vanilla essence

1/2 teaspoon ground ginger

1/2 teaspoon salt

2 small pears, peeled and chopped finely

1 egg

1/2 cup yoghurt, plain

1/2 cup Rice Bran Oil

Optional topping mixture:

3 tablespoons sliced almonds

3 tablespoons packed brown sugar

Method:

  1. Preheat oven to 190 degrees.
  2. Sift first six ingredients together into a large bowl and stir in the chopped pear.
  3. Whisk together egg, yoghurt, vanilla and oil. Stir into dry ingredients until just combined. Do not over mix.
  4. Fill 12 greased muffin cups about 2/3 full.
  5. If using the optional topping suggestion above, mix the topping ingredients together and sprinkle over each muffin
  6. Bake for approximately 30 minutes, until lightly browned
